It’s crazy COLD today & unbearable outdoors so it was a #soup kinda day! This has to be the fastest, easiest & in my opinion the tastiest soup ever! It has a bit of a spicy kick to it too. 😀 I grew up on this simple collard soup being Portuguese so to me it’s the ultimate comfort food! I would normally substitute the potato for something like brown rice but not today. 🙅😁 So for those of you who don’t know there are MANY benefits to including #collards into your diet! Like my friend Kale, Collards are descendants of the wild cabbage. They are actually one if the worlds healthiest foods! They are fiber rich, loaded with vitamins and nutrients, have anti-inflammatory benefits, lowers cholesterol, offers cancer protection, digestive support, and also supports the cardiovascular system. 💚💚💚✅✅✅
